As for the ones in the air, the only reason Rhaegal got nailed before, was due to the element of surprise, the fact that he was flying at an easy cruising speed, and the fact that he was riderless.
When Drogon attacked, he was flying a lot faster, and Danny was directing movement. The show even takes the time to zoom in on Euron, to show how difficult it is to aim, when Drogon is moving that fast. Realistically speaking, moving the device is too slow. They'd need to lead their shots. But even then, they don't have a good feel for trajectory of their shots, thanks to limited practice of experimental weapons.

The men don’t come back except for one who says it’s lost to the others, so Dany agrees to go north with her dragons to destroy them before they can use it.
That’s when one of her dragons is killed and she retreats with whatever survivors there might be
Turns out the horn of winter was bullshit, and the others knew that, they also knew Dany would come for it, so they baited her to steal one of her dragons, which was their real plan to destroy the wall.
