For me it would be the Mandalorian Wars and a series about Darth Revan.
What's most interesting to me is how Bioware was able to tell a Star Wars story a thousand times better than Disney can. They actually researched hard the lore and mythology, and worked hard to incorporate their story into all the existing expanded universe such as novels and comic books, instead of just going "lmao it's all non-canon". Even in the game, through dialogue and conversations, you uncover lots of background plot and story on events that take place in various comic series in the Expanded Universe.
