This isn't true. Men and women have naturally blonde hair at the same rate, the difference is that tons of women dye their hair blonde while very few men do, which is why you see such a massive discrepancy in the number of males with blonde hair and the number of female with blonde hair. We all know that young children who are blonde often have their hair darken as they get older, the difference is that girls start dying their hair blonde again in their teenage years while the boys don't bother.

They basically threw everything appearance related out the window except for the characters specifically connected to the "Lannister Incest" plot. All things considered it's pretty minor imo, Tyrion having blonde hair was never necessary since he was a deformed monstrosity and even in later seasons Jamie's hair can be explained away by aging.

In the show they kept it to black hair, which Stannis seems to have, though Shireen didn't and that was a major flaw. Renly was dark haired enough to pass.
The varying Stark appearances didn't matter as it didn't affect the plot.

It's ironic that as the season got visually more grimdark the story got sillier and more like a cartoon. Ned Stark's death and the Red Wedding still stand as darkest events in the entire show and they both happened back when the show could still be colorful.
Then in these seasons all the men grow beards, all their hair gets dark, all their costumes lose all their color, people can only wear black, white, and various shades of brown and grey, yet the show feels less and less serious because our brains pick up on this over-correction. We subconsciously know this overcorrection is result of the show trying to appear more mature and "grimdark" by muting all the colors but since the writing isn't strong enough to back it up it rings hollow.

They kind of do, but at the same time you could easily change it to: "Baratheons all have dark hair, Robert's bastard children all have dark hair, but somehow Robert's children with Cersei all not only have blonde hair, but also her green eyes?". The hair thing specifically isn't really the problem so much as the bastards providing evidence and the eyes on top of that.
Hell, we all know irl that if a man with brown hair/brown eyes descended from a family overwhelmingly from people with brown hair/brown eyes bangs a blonde/green-eyed chick, the odds of more than 1 in 4 of the kids having blonde hair *or* green eyes is pretty damn low. but in 3 in a row?
