They started diverging from the books quite a bit before that. The end of season 4 is when they went completely off the rails (although, there were already some really bad changes before then, but they weren't as significant in hindsight).

Dexter never had any real depth in characters or plot. What was appealing with Dexter was that the serial killer actually was the protagonist for once. It worked for a couple of seasons but it got repetitive pretty quickly and every season was basically just a cat and mouse game with Dexter and another serial killer. Sure the last episode was god awful but that whole last season was just terrible. Dexter was also made just when the format of 40+min/episode started to appear on television for real. That "genre" have evolved a lot since than and Dexter wasn't really utilizing the possibilities of multi deep character progression arcs and a ever progressing plot line. Instead they basically made every episode a stand alone episode with the story progressing a tiny bit every episode while which just made the series repetitive.

GOT from a pure tv show perspective (haven't read the books) have maintained high quality for a very long time. I didn't really have a problem with GOT until season 7. Sure I didn't like the dorne shit with the sandsnakes and shit but it didn't destroy GOT for me. I first started raising my eyebrows when Arya came back to winterfell and was some full blown assassin who also could 1v1 anyone in a fight out of nowhere. Had no problem about the assassin bit. But her being a skilled fighter after playing with sticks for 2 seasons just seemed silly. I had real problems with little finger dying out of fucking nowhere and all that drama in winterfell between arya and Sansa. But this season is just abysmal in every way.

I enjoyed Dexter to varying degrees all the way up to that abysmal season 6, but I still understood that the show was always trash and that the B plots were always completely worthless time-filling exercises. seasons 3 and 4 of dexter were honestly not that good either. 1 and 2 were fantastic and they just couldn't follow up. 4 especially writes the character to make stupid and out of character mistakes just for the plot to advance

Dexter was never as good and mostly ended up getting shitty as a result of trying to ripoff Breaking Bad.
Dexter went to shit with season 5, when he started getting 'emotional' with his bitch Lumen. The idea that 40+ min/episode was new with Dexter is simply wrong and that every episode was a standalone episode is also wrong.

This is actually a decent comparison because the drop in quality was for similar reasons. Dexter deviated from the source material and Game of Thrones had none to work to.
Dexter ended when Doakes died, so it's decline was long and drawn out. Game of Thrones had a sharp decline when it's source material ran out.
