It's not really that complicated. ASOIAF got sort of lucky in getting an HBO series since the author already had some connections in the TV industry. There are a dozen other fantasy series that are very similar and the authors had no trouble giving proper endings.

Reminder that any contract George is under to withhold books will also contain a clause where by he must deny if accused to holding off on books at the behest of HBO to protect them from any backlash that may incur. He has much more to write but they have stated, both GRRM and D&D that they are doing his ending with changes because he did not have it written.
