Surely the play should be to keep her prisoner in the red keep so Dany can't attack it with dragon fire lest she accidently burns her?

They had no time to set up Dany's rage, so yeah, they killed her best friend to give an excuse for going ape-shit. It would make more sense to keep her hostage.

Ideally it would be a prisoner exchange for Jamie, Cersei says she wants him dead and kills Missandei anyways. And then Jamie gets locked up and is freed by Tyrion, not to be with Cersei, but to kill her. He does.

Because the writers have the mantra of subverting expectations stuck so far up their own ass they don't realize that's now the expectation. Being unexpected is expected, they became boring.

DABID were done with the show, wanted to move on, even though HBO said they would give them the budget to do more eps/seasons.

I imagine it must get boring to work on a show, even if it's one of the most popular shows making you bank, for 10-15 years. They wanted to hurry up and get it over with, so they went for speedy, mediocre motivations and results as well as resorting to shock value

Martin said he thinks they would've needed another 5 seasons to resolve the story properly. I think if they had wanted at least a "decent" ending/resolution they needed to do 80 episodes at a minimum instead of shortening season 7 by 3 eps and season 8 by 4 eps. And this is bare minimum. I think with a full 10 eps x 8 seasons with an epilogue season 9 it could've at least given them a chance at a guaranteed mediocre ending with some controversy thrown in.

The plot demanded it so it happened.

Grey Worm would've done anything Dany asked of him, except kill/leave Missandei. It's how he's been raised. They needed Dany to have a reason to become mad, so she couldn't have anyone around her who loves her.

No they wanted it to be unexpected just for the sake of it being so. Which resulted in them throwing every logic out of the window and commiting retcon after retcon or shoe horsing left and right.

Cersei was just reinforcing the fact that white women are superior to filthy shitskin sluts. If you watch closely you can see Cersei and Dany making eye contact as if to silently tell each other that as white women, Cersei just did the world a favor and Dany applauds her for it.

Why did Renly challenge Stannis even though they had enemies all around them?
Why did Stannis kill his daughter despite caring for her more than anything else?
Why did the sand sneks kill their princes and kin when they wanted to revenge their prince and kin Oberyn?
Etc...

The show has been like this since the beginning and only now some people are starting to see it.
