Most of Westeros is flatland, hills at most, you can charge a dragon straight at any castle burning everything in your path and kill everyone along the way, but in Dorne you've got a load of peaks and valleys with tons of nooks and crannies to hide away in, if you want to fight those hiding in them you have to get close enough for them to fight back.
