She's not supposed to be unattractive. The character who calls her that is just ridiculing her because she fancies herself as a skilled warrior and an important person amongst nobles but she's a shit warrior because she's a woman (which doesn't really make much sense in the context of the game and it especially doesn't work if the PC is a woman) and she's a low tier noble sent on shit jobs just to keep her out of the way. He's calling her an animal because that's about as high a regard as she is held.

No, she is supposed to be attractive, that's actually poignant part of her character, it's just an insult that guy throws at her because he has no time for thots. Mercedes is the captain of the guard and she fancies herself as such and as a valiant knight but you learn that she is not really taken seriously by the populace or her men and that the duke only appointed her to that task because she is a foreign noble and to parade her around as eye candy. Plot stuff happens and she challenges that guy for a duel which she loses resoundingly, he is mocking of her the whole time and calls her a bleating she-goat who is only useful for warming the beds of her own men, he just destroys her. After she loses she admits that it's all a facade and that she was foolish enough to believe it, her own family sent her to the duchy because they also did not take her seriously. Even though she is completely defeated she says her intentions were always true and vows to become the knight she thought she was. It's a pretty good character arc and it's played straight while subverting expectations (lol), she is introduced as the fierce female warrior that is above your station but that image is completely subverted while keeping the spirit of her character true
