the pelennor fields were the lowest level of minas tirith, surrounded by a great wall, and formed their faimland. Presumptively this wall was breached before the siege (maybe at the same timeframe osgiliath fell), and the lands between fell.
Doubtless in the film, the fields are kept empty to make the magnitude of the battles more impressive.
