A shitton of the wordcount is descriptions which will only take a second to show on screen. There's also a ton of repetition because for some reason Jordan thought everyone would forget that the aiel humor is weird or that the aes sedai have ageless faces and all the other stuff he repeated every time a new book was released. Also, a ton of the minor characters can be combined.

I'd prefer it if less adolescent fiction makes it to screen. Wheel of Time is incredibly cringeworthy and badly written. Even George RR who likes to describe a character's sharts manages to write more interesting events than WoT's utterly boring attempts at politics. And the female characters, fucking hell. Just awful.
