Seems like he just wanted his men to be prepared for war. All of the "evil" stuff that he did to Easy Company were entirely reasonable scenarios that they needed to be prepared for.
Making them run up the mountain on a full stomach was something that could happen in a war. Punishing them for stealing supplies is reasonable. Demanding that every man follow exact orders, no matter how insignificant they may seem, is a no-brainer. These are things that could make a difference in a life or death situation.
His men even said it themselves: they were made to be capable of things that no other company could handle. Sobel was the reason why they achieved so much.

Show was based on a book that was written by a guy who didn't like him. It's not like any soldiers would ever lie right, see Chris Kyle and so on. Especially not after WW2. Men were honorable back then and the guy who wrote that book was an amazing leader who made all the right the decisions had a cock like the arm of a toddler, beloved by all of his subordinates, and freeing concentration camps in between being badass. Not like that Zobel guy, who was a petty cunt that had no redeeming qualities whatsoever and he stank and he had a small cock.
Not ever was there a case of soldiers lying for petty reasons and Zobel was totally justified to die of starvation in his shitty retirement home after he failed to kill himself. It simply doesn't happen that innocent people suffer like that, he must have done something wrong.

Driven/ambitious and physically fit, but arrogant, inflexible, and a piss poor leader with questionable soldiering skills - he did not inspire his troops, he lorded over them. Fairly common of officers even in the military today. Great test takers, great evals from their superiors, but couldn't lead a horse to water. Their men succeed - IF they succeed - in spite of them, not because if them.
Sobel's harsh methods were effective in banding the company together and pushing them to be their best. As a leader he was awful, and had he went into combat the unit would have suffered, but as an administrator and an instrument used to weed out everything but the best, he succeeded. Sobel's place should have always been in a training environment. He would have probably made a decent basic training drill instructor.
