That's the things, in the books they don't. They are supporting another Targ Aegon and were planning to use the dothraki to destabilize the realm, so Aegon can come in with the golden company, save the realm and be the hero.
When they made the first season you have to assume that's the route they were taking with varys. Because how can he want to protect the realm and still plot to bring dothraki over the narrow sea. How can he claim to want peace and let the Lannisters kill Robert. His words and his actions dont match.
When the show decided they weren't doing young grif, they had to pivot Varys plot so he always wanted peace.

Nothing Daenerys has done or wants to do is all that crazy.

The dragons were never part of the plan. Originally it would only be the dothraki, and while dothraki are great in an open field they're stonewalled by stone walls. The lords would retreat to their castles and keeps and the dothraki wouldn't be able to do shit about it but try and wait them out. Eventually they'd run out of countryside to pillage, run low on supplies, spread themselves too thin, fall to infighting, with some time they'd be a weak husk of what they began as and that's when Aegon and the Golden Company would swoop in and 'save' Westeros, Dany was always meant to die, she was just incredibly lucky that Jorah's a punk bitch and saved her (multiple times) and that she accidentally hatched dragons.

The crazed pirate is Victarion Greyjoy, brother to Balon and Euron. He also gets into a fight with monkeys (actual monkeys) and loses. At some point his arm is wounded and heavily infected, and the red priest heals it in a ritual that leaves it completely burnt black.

There's nothing to suggest those cities they've taken were properly fortified, while the actual fortified cities (like Qarth) remain standing despite their many attempts.

In the books, there's a plotline where he and his secret club have been grooming someone from birth to become ruler of Westeros, but since in the show that plot was cut, they merged his motivations to want to put Daenerys on the throne.
