The entirety of the North is connected by underground tunnels, the same ones lead directly under winterfell crypts, maybe a 100 could have retreated along with principle characters on Drogon.
Then they could have met up in the Stormlands and rallied the Riverlords along with Radmure and possibly what was left of The Reach and Dorne.
Even in the books Dany has visions of the White Walkers past the Neck of Westeroes and in the Riverlands.
Any number of things could have happened instead of what we got.

Why do mercenary armies even exist? I understand a sellsword accepting a job for killing some defenseless person or escorting a merchant of some sort, but fighting in an army, against another army? That means you're probably expected to die, no amount of gold should be worth it.

Before the night king reaches Bran several of the WW's and the zombie dragon are killed. WW's getting killed causes part of the army of the dead to crumble. NK has to regroup outside the walls.
The battle took too much of a toll on the living. A couple people stay behind while the important characters dragon and ride out of there and retreat to the neck or whatever. Brzn warts into a human that stays in Winterfell and warts out when NK reaches the vessel.
In the battle at location 2 Arya manages to assassinate NK much like how it happened. Army crumbles but the remaining WW's don't burst to pieces. They retreat back north.
A third battle pushes them beyond the wall. Or a 4th, 3rd can be retaking Winterfell.

We could have had the 'fake out' people have suggested, where white walkers and the the wights attack Winterfell, but the Night King actually goes south to King's Landing. After he takes that over, they start moving north again, perhaps with the people in the north moving south so that the final confrontation is in the Riverlands. It would mean the "Long Night" lasted more than an evening.
I can understand the mercenaries being paid to protect a city and such, acting like guards who'll likely only fight petty poorly armed thieves and slaves trying to run away.
Normal armies only really work because the soldiers more or less are willing to die for their nation/commander/etc. An army of mercenary soldiers would likely run away if they thought they were going to die, they're doing it for the money, not out of loyalty.

A less than 10% casualty rate was standard for a medieval battle. Chances are you'd never actually see the enemy up close, either you or they would retreat. You'd be paid to show up, with looting and spoils being the actual motivation to "fight" the battle, ie. not run away immediately.
