Theatrical or extended?

Definitely extended. It's not a case of which one's better, it's simply, the extended version adds in value positively to the theatrical cut.
try to watch them back to back too, in one session preferably if possible.

This, once you have read the books you never see the movies the same way again. They are still good, but you start to notice how empty and hollywood they feel.

That being said, if I'm going to watch the films I would rather the theatrical cut because the pacing is much better, even though we dont see as much of the greater story.

People shit on the theatricals but they are better paced. (Especially The Two Towers)
