Just because Televisa and TV Azteca controls most of movie making they basically remakes the same telenovelas stories, but now as "romantic comedies", also they bought the rights of several international films as "3 Idiots" and turn them into rom-com too.

Now this is entirely intentional, rom-coms are the most succesful movies in Mexican movie theaters, they want to make their money back, so they sell what people want to buy, they ried horror films and failed, they tried a couple action films and failed, so don't blame only producers, but the audience too.
