They showed his origin in that scene where the Children of the Forest stab that guy who's tied to a tree. They will never explain his motives though, one of the Children had a line where they told Bran that they had to create the Night King because men were endangering them, so I guess he was just a terminator programmed by the Children to destroy mankind.

GRRM was probably going to have the Others turn out to be something like normal people, but ice-based. Men are basically their White Walkers, and this age since the long night has been their long night, because they can't live in warm climates.
This is the worst criticism about the white walkers, they're supposed to be terminator zombies with an ambiguous plan to exterminate humanity, one of the few things that they did correctly was making their intentions as vague as possible.

The children and the first men existed together. The children thought the first men were going to wipe them out.
They captured one of them and used obsidian to create an antithesis of a first man, the night king, who they could use to control the population of first men.
However, the Night King was unable to be controlled like the puppet he was and had a mind of his own, and that mind was to just kill and raise first men.
The Night King himself is unimportant and unremarkable, what may be more interesting his is generals, who were clearly more complex beings than the Night King himself.
The whole thing was just a ripoff of The Lich King anyway.
I think watching game of thrones now it's entirely obvious that all this show/universe really is is a low-quality copy-pasta of lord of the rings and wrath of the lich king with nothing near the level of artistry.

In s1e1 Ned Stark has sentenced a deserter of the Nights Watch to die by beheading and has a conversation with Bran afterwards.
Ned: "But do you understand why I had to kill him?"
Bran: "Our way is the old way?"
Ned: "The man who passes the sentence should swing the sword."
This means the Starks have an old honorable tradition of personally executing the ones you sentence to die.
The Night King had sentenced the Three Eyed Raven (Bran) to die and therefore has to personally execute him because of his honor as a Stark. "Our way is the old way."
If the Night King is an honorable man, that would explain a lot of his behavior. He doesn't want to kill men, the one who told you he wants to, the Three Eyed Raven, is a liar. (there is further evidence 3ER is a liar)
George RR Martin doesn't write purely good or bad characters and GOT is known for flipping your views on characters, just like Jamie Lannister went from bad to good, the Night King might go from bad to good.
