It really is just bad writing. Fact is that Bronn is basically a Lannister's bitch and without them he is literally nothing. Not only does it nullify the whole friendship Tyrion/Jaime build up with him but he also fucks over Cersei basically and threatens to kill Tyrion and/or Jaime for the richest province in the entire Seven Kingdoms which is a completely unreasonable stupid demand.
Bronn however has no friends, family or even hired henchmen so Tyrion/Jaime/Daenerys/Cersei can simply kill him at any point and nobody would do a thing. And considering he isn't exactly dependable there's no reason why anyone would even give him a bucket of dirt, much less an entire province.
Literally anyone could have written a better last season... Why can't we just have kino

Him threatening them for it makes even less sense. He's a trusted friend of the Hand of the Queen, and there are so many empty castles now with noble houses dying left and right. Cersei already paid him a shitload of gold, why not politely ask Tyrion for some semi-important castle that's vacant since the house owning it has been wiped out (Horn Hill, for example)? If Dany wins, Bronn gets the castle. If Cersei wins, Bronn still has the gold and can do whatever he wants.
