I think that the Faceless Men (the guild that Arya joined) probably caused the fall of Valyria. At least that's what's hinted at in the books. There is an interesting parallel between the Doom of Valyria & whatever magic the Children of the Forest used to break the arm of Dorne thousands of years ago.

The entire point of the setting is they never progress beyond Medieval Europe. Once they hit a certain level of technological advancement the AI running the dyson sphere dims the artificial sun at the center, begins "Winter", and sends it's nano-bot White Walkers to cull 95% of the human population so society collapses and the cycle begins anew.
They specifically said at the citadel their records and fragments from previous civilizations inicatre that civilization has utterly collapsed and been reset countless times. The cycle could have been going on like this for millions of years.

People go missing whenever they go there , the Targ's strongest dragon in their history went there and returned injured, its rider was infested with snake/worm creatures too. I strongly suspect D&D took some liberties with that stuff as well. In the past, GRRM has described the Others as being "inhuman" and like the Sidhe from mythology. Then we get this half-assed "The Walkers used to be human" thing in the show, no explanation for their motivations, and it's all BTFO by Arya so they NEVER have to explain it.
