Going back in time does not change your own past but instead splits the timeline.
The only consequences are what you leave behind, such as Loki fleeing, Tony giving his father pointers or Cap going back to Peggy to live with her in a different timeline

They went with multiverse time travel rules specifically to avoid paradoxes. They still had to return the stones and Mjolnir out of "obligation" but some of the changes they made in those timelines are irreparable.

The Russos either always intended it to be an alt-Steve we see as an old man at the end, or they realized their own fuckup after the fact and glossed over it in their Q&A. If you can put an object back "before the world notices," you can put a person back, too. Since you're creating surplus copies, no one is missing a thing. At worst, the divergent timelines are places where you brought a copy forward and those where you did not. Here, I'll do the math for you:

Timeline 0: No Tony
Timeline 1: Borrowed Tony(1)
Timeline 2: Copied Tony(1), Borrowed Tony(1)
Timeline 3: Copied Tonys(3), Borrowed Tony(1)

Now you have a Tony you can return to to each timeline, keeping one for your present. Everybody gets a Tony through the magic of geometric progression. At worst, all you've done is create timelines with no surplus Tonys, because you only returned one to each timeline.

There is one timeline Thanos does not exist in anymore.
Any timeline that is unchanged will have events happen the exact same way its shown to happen in the movies. That goes for possibly them going to Asgard in 2013, perhaps. And maybe 1970 since that is a long time before and the changes are fairly limited.
In any other timeline who knows. In the one cap lived in, its possible he ensured people like Thor and Captain Marvel stopped Thanos before he could gather the stones.
At worst its a setup for other timelines branching into the main one anyways.

For every time you go back you split. You are not creating surplus copies you are taking them away from a timeline.
Thus the one you pick up leavs a hole behind.

All they had to do to bring dead Tony back was have Hulk use the time stone to rewind time for ONLY TONY, like Thanos used it to re-alive ONLY VISION. Take the other stones out of the gauntlet so Hulk doesn't get injured again.

It is not possible to change the future of any timeline, traveling back in any timeline will only create a split timeline.
Taking something from a timeline means you create a new timeline where this does not exist anymore, and you can only bring the original back. Any copy is just bringing something back from another timeline, with a new one created in its wake.
The infinity stones are the manifestation of the laws of the universe, they only serve to ensure any timeline does not collapse.
The main timeline does not collapse because the stones were reduced to atoms and thus made unusable. They still fulfill their function.

Cannot rewrite time when creating two time stones in the same place, rewinding time brings things back to their previous state. Which in this case means having Tony with the stones while having the Stones. Not possible.
