GoT used to be about reasons and consequences, but that time is long gone, it seems. DnD simply wrote a guy with teleporting stealth fleet, that can sneak up even on a pair of dragons in the sky and one-shot them with his magic ballista.
It really is like if the character is EDGY enough in these seasons they're just invincible gods who can do anything until they need to conveniently suddenly lose.

Show Ramsay had to fight the Ironborn to be set-up as a threat. That is why that scene happened, and the mistake was in the fact he got taken out from Season 2.
Stannis will probably still die to the Boltons in the books. But it will probably be Norfman Conspiracy rather than Ramsay. Probably also setting up the Norfman conspiracy against Daenerys later on.
D&D probably just thought that making the Norfmen betray Stannis would make them look bad when the White Walkers eventually come and wreck their shit, so they made up The Battle of the Bastards instead
