First, I was talking specifically about the "open-world" comment. I think trying to go open-world would kill what makes From Software games good, but I don't feel like arguing on that topic.
Are you kidding on the storytelling part though? George has never been a "subtle, world-building mostly through lore" storyteller, his strength is in his characters, which Souls really lacks, and Sekiro doesn't really do a good job at fixing it either. I couldn't disagree more; Souls may have similarly fleshed out and interesting worlds, but it achieves these in a completely different way to ASOIAF. Even a game with a Sekiro approach would still fail to do justice to the area George succeeds in most, and the area he feels is most important to the story: the characters. I don't believe George's writing is suited to a video-game adaptation of any sort, and certainly not a From Software one.
