There's not a lot of options left at this point, sadly. The turning point was the moment the show overtook the books. The writers could never emulate GRRM's talent. If the show runners were brave, they would've paused production of the series until they could deliver the great writing we've come to know from GoT.

The only option I can think of is both expensive and risky: finish out the season with a bittersweet ending, publicly admit they failed to deliver writing of the caliber we all expected, then either 1) wait for GRRM to finish the story his way or 2) start rewriting the final 1-2 seasons, re-film the last 1-2 seasons with better writing, then release it as an alternative, TRUE ending to the series. Maybe handwave the bad final season as being one of Bran's visions or something. Or just say fuck it and tell viewers to pretend it never happened. Point being that they'd have to completel redo the last 15ish episodes and that shit will never happen because money.
