Surely by the time the war was going on for two years and the higher ups saw that soldiers weren't moving at a high pace in their trances they would have made rations that lasted for years to come. At the time they probably thought that the war was going to last for at least 10 more years. So why so little of those rations remain?

Probably has to do with not figuring out a good way to keep them preserved.

I would guess that military rations from that far back were still largely things like salted meats and hardtack and not canned foods that could last decades.

Because most of the WW2 and Cold War rations are from the US, never delivered to the actual war zone. WW1 was mostly in Europe and you can imagine that after the war there was a massive food shortage. So they most likely used them all up.
