In the historical lore, the first Targs won only like 3 battles against the Westorosi lords and literally roasted most of their armies to death forcing them to bend the knee. The North went to the face Aegon and by then the Targs had a real army to back them up AND dragons, so Torren decided to kneel. Dorne realized the secret to defeating the Targs was to simply deny them use of their dragons in pitched battle along with clever use of ballistae. Really Aegon only won because he blitzed most everyone before they knew what to actually do.

They actually tried to do that last episode. Dany was going around burning the rear portion of the undead army while they were stuck against the flame pits and castle walls. That was literally how Aegon won one his battles, except he had three dragons his "wall" was his tiny retainer force, and he wasn't burning undead he was burning people who are much more liable to panic and run away in terror having their escape route be blocked off by fucking fire.

However the issue is most of the show has taken place in the north which is lightly populated and we haven’t seen much of the actual rich parts of Westeros like the reach and the westerlands that have bigger cities and towns, warmer climate etc.
