The flames are incandescent carbon particles and sometimes there's charged gasses that light up as well, but 9 times out of 10 what you're seeing is glowing carbon particles. Fire is a chemical reaction, it's not a substance.
The sun is a nuclear fusion reaction. Hydrogen is charged and glowing around the core where the hydrogen is fused into helium. Eventually the sun will start to fuse heavier elements and stop working.
