That is not how GRRM and their conversation went at all. GRRM only told them that Shireen gets burned in the books at some point, he never once said who and most people assume it to be Melisandre and Selyse, since Stannis is hundreds of miles away.
D&D just assumed it was Stannis and placed her in position of the nephew or cousin he actually burned, I forget which. D&D hated Stannis and thought he'd be the worst King, even worse than Joffrey and the Mad King, they hated him with a passion while missing the entire point of his character and just nature in the books.

FWIW, the audiobook version makes pretty good bedtime listening. It's impossible to actually read as a book but the tedium and dryness of the material spiked with occasional historical narrative is pretty much perfect comf and coze when read by Roy Dotrice. But I think someone else actually reads portions because it sounds spliced-together in parts. Highly recommended for this specific purpose, though
