Honestly, after S4 there were still enough untouched plots to adapt and unintroduced characters left to fill several seasons. But for some reason, either DnD or HBO decided that the show should end quickly. There were barely any new characters introduced and those that were were just one-note caricatures like sneks and Euron.
DnD said in an interview after S4 that they decided to end the series with what is already on the table. So, no new arcs, plotlines or characters. They made Arya kill the NK with that dagger, because that's what was lalready on the table. They weren't going to introduce new elements to bring the show to a conclusion.

Remember hardhome when the NK raised all the dead there? Well he only raised the dead in that vicinity... not all over Westeros. Same thing at battle of winterfell, only the dead in the vicinity rose back up. Same rule has to apply to the White walkers, the children of crasters, etc that were not at the battle ...
