Things started to go awry when they lost the 1:1 correspondence between books and seasons in s3-s4. You have stuff like Theon torture porn for two straight seasons, Yara fucking circumnavigating the continent to get to the Dreadfort and get beaten by shirtless Ramsay, or Stannis' final scene in S3 obviously being supposed to lead up to him going north, except they figured out they wouldn't need him until episode 10 so they sort of gave him random shit to do for most of s4. Already then, it should have been pretty obvious that they couldn't handle the plot without a strict guideline and were just making that shit up as they went along.
Then s5 hit, and I can't blame D&D for the shitty position GRRM put them in: faced with the two hardest books to adapt, less liked by fans than the first three and filled with a shitload of plotlines, without a clear idea of where they were going because the books cut off right at the moment when those plotlines are starting to come together. Substantial changes were almost inevitable.
I can, however, blame them for how badly they fell on their faces the moment they left the books: the abysmal Dorne plot, characters starting to die for no reason except to thin out the cast, other characters being thrown around the world just to give them something to do. S5 was a complete shitshow, and it set the tone for what was to come.

I like the show-version. He is basically discount Tywin but he sold the idea of playing a stoic, diabolical mastermind pretty well. My complaint is we don't see much of him and Ramsay being put too much in the spotlight. I would prefer if they keep the whole 'creepy' father and son dynamic a bit longer.

When I think back on it, I really think ADWD is a great book. The way GRRM builds up so many stories at once and the build up in itself being so intriguing. It's been years since it and I still think about how the story will continue.

I'd say season 2 had an immediate drop. Less interesting to look at, not as sharply written scene to scene, the plot wasn't driving as hard, minor deviations to characters were already getting fucky (have Jaime kill a cousin to accomplish nothing after in the first season probably making him more sympathetic than in the books, after this go back to trying to make him look good, Stannis/Renly weakly established so we can only really sympathise with or follow one side of the blackwater battle).

I feel like secondary characters were handled like shit mostly after the first season.

How are they possibly going to fill three entire 1.5 hour episodes now? The main bad guy in the series has been defeated and Dany's/the North's army is so depleted that they can't possibly have a confrontation with Cersei's army that would last longer than 10 minutes.

As far as that goes the "plan" was for Daenerys and Jon to wait until the Night King surfaced and then 2 v 1 him with their dragons. When Daenerys saw her dothraki getting obliterated she panicked and went to help, getting caught in a mist. Jon had to chase her so that she didn't get 1 v 1 wrekt by Night King / Undead Viserion.
