I think his point is generally that conflict is more nuanced than just white vs black. There are black and white conflicts in ASOIAF aswell but they are often made complicated somehow. The show has become good guys on one side against the bad guys on the other. It's so simplistic and easy compared to the books. It's like the narrative went from ASOIAF to LOTR. They also likened Long Night to Helm's Deep. Which to me is telling how much they've distanced themselves from ASOIAF to please mass audiences and themselves.

They only wanted to adapt the books because they thought the Red Wedding was shocking, ignoring everything else that made it so good.
