Only thing known about them were legends and the legends said they had been defeated before, so nowhere was it said it was impossible. And they turned out to be much bigger threat than any of the characters in the show expected. They prepared for the battle believing they had a change if they team up but simply got ran over from the start and killing NK was literally the only thing that saved westeros from total destruction.

I am not even that sure you need to go that far just give humanity a MASSIVE loss at Winterfell and have them retreat to Kings Landing. Have Jamie (or Tyrion) convince Cersei to save humanity or all will be lost. And then have Bran (or maybe also save Sam and have him as part of that) figure out something through visions and some of the books from the citadel to maybe use the wildfire to stop the NK. Sit Bran on the iron throne and after all is lost have Cersei blow up the entirety of Kings Landing with a ton of wildfire and let the NK go up in flames and end the WW once and for all.

In the end the iron throne doesnt exist anymore as Kings Landing is literally ground zero. Maybe have Jon battle the NK 1on1 in the great hall infront of the throne to buy the needed time to set the wildfire plan in motion as Bran comes up with it last second.

The ending is in fact "Mad Danny" with Jon killing her and Cersei is going to presented as the villain and probably die to Jaime. In order to even DO this ending, which is likely the ending to the books as well, they cannot come off as female hating patrairch pushing mansplainers in the 2019 metoo movement era.

So since the Night King is a product of the show and isnt even in the books (well there is one but its a legend) the idea of someone killing a single entity and ending the war isnt likely in the books at all. Jon is probably Azor Ahai but its probably metaphorical and about him rallying together an army and danny and stuff to come stop the white walkers and in the end they win somehow but get their armies decimated. Since the Night King is a show character they were free to do what they wanted with him and since the great war (like it or not) is just going to be a plot point to get to the real ending (Mad Danny, she's our "Sauron" not the Night King) they had a choice... give Jon "the kill" (a kill that wont even be in the books) and then also have him Kill Danny and have Cersei die and have the whole show come off as the most anti-feminist media franchise of all time in a heated era of gender politics OR give a made up character (the Night King) to Arya as a cinematicaly easy way to show the great war ending AND get all the feminists to rave about GOT right before turning Danny evil so they'd be hypocrites to suddenly hate on it in the end.

Thats whats happening here, it doesnt make sense thematically for Arya to get the kill but its so they can actually do the REAL main plotline which is Danny is Sauron in the end.GRRM hates empty evil for evil sake badguys like the Night King he wants his Sauron to have purpose and motivations and for it to be character drama. jaime could have had tons of relation to the night king if they had bran in the past and "burn them all" was something being said in the current time about the dead/WW and it cause aerys to go crazy and jaime to kill him.the azor ahai prophecy had azor ahai coming from the targaryen line and they could have done bran flashbacks to tywin and the mad king fallingout over the mad king raping tywins wife (the mad king openly lusts for her in the books and may have slept with her) and showing that jaime was actually the mad kings son (and cersei thus the incest being a targ trait and foreshadowed) and tywins only real son was tyrion all along which would add a whole elvel to tywin and tyrions characters. jojen predicting "the end" with a vision of a flaming hand could have been jaimes golden hand on fire, if lightbringer requires a sacrifice to "forge" brienne (or cersei if they moved the fight to KL in a retreat somehow over the course of a few episode) would have been excellent to see. and jaimes entire character has been about doing whats right for humanity, saving KL from aerys despite no credit for that as a heroic act.

jaime was a great night kingslayer candidate, possibly the best candidate, if they did it right. Arya makes no sense, oh and shes still alive she didnt even kill the night king in some sacrifice for humanity death so like build a new fucking throne who cares about cersei or being a decendant of aegon the fucking messiah just ended thousands of years of white walker oppression and is more important than the fucking timeless wall itself time to create a new fucking dynasty, bow down dragon lords you pale in comparison to this.

She didn't go against him in fair combat (that she couldn't win even if it were just her and the NK), she got him by surprise. And that was made possible by the general effort of every character involved in the overall battle, she didn't win this war by herself.

The scene was still very bad, the NK shouldn't have died so quickly and we don't know how Arya got there without any white walker noticing her, but she is an assassin and always had a facility for fighting, that is her character and always has been, since the first time she appeared on screen it was made very clear.
