How the FUCK does everyone suddenly know the specific White Walker that confronts Jon at Hardhome is the Night King from season 7 and onwards? In fact, how does Jon know that is the Night King in the first place? The show never mentions the Night King before the "Hardhome" episode and never establishes any mythology at all surrounding him, but in every episode after that everyone seems to accept that is the Night King and no one even seems to question who he is, everyone just seems to know about him. It makes some sense that northerners had heard legends about him, but even southerners like Jaime and Tyrion talk about him like it's not even strange that he exists. What the hell is wrong with this show?

Why didn't the white walkers have a deadman trap?
It's quite simple, they leave some zombies up north that have orders to keep some humans fed and healthy, but one of them has to constantly hold up a very heavy weight, that is balanced and connected to a dagger of dragon glass that is pointing to the humans chest.
So if the Night King dies, the zombies die too, then when the zombie has died no one is left to hold the weight that is stopping the dragon glass from going into the dude's chest. Then a new Night King is born at the death of the last.
The worst thing is that the events of this episode discourage me from rewatching the series ever again
not because its not my first viewing anymore, but because this episode made everything that happened before it so utterly unimportant and pointless, that i know i'll just seethe more and more the further i get through the episodes

It was her arc in Braavos where everything about Arya went wrong. The actress aged horribly (and she started pulling her hair back) and every single Arya scene after she boards the ship for Braavos is stupid. D&D really misunderstood her character.
I said it before: Arya should have stopped being a recurring character after season 4, she should disappear into Braavos, and only appear once again to murder Walder Frey like she did in the show. Then she's never seen again.

Keep in mind that writers of a show often have people helping them write things like dialogue. I think the abundance of source material and possible finality of only being able to adapt one season made some amazing things happen though. Even a broken clock is right twice a day.
