Thanos should have kept the Time and Soul stone so he could foresee the Avengers killing him, and then right before he is killed he uses the soul stone to keep him alive as a ghost that haunts the Avengers for the rest of the movie instead of having that shitty cardboard past Thanos.

only saw it undo stuff that already happened but the more likely answer was he just didn't know that destroying the stones would create a massive explosion that almost killed him, he was at ground zero when the mind stone exploded and that didn't seem to effect him much so it'd make sense that he wasn't prepared for it
