Having Arya kill the NK was just pure laziness (not so surprising considering who is behind the show). Just think about it, everyone was expecting Jon, Dany or some other characters to confront and maybe fuck him up (or die against him), since it's an expected event it needs to be well written if you want your audience to react to it. With Arya though you have the surprise effect (because it's not coherent at all) and that is enough to please your brainlet audience that only seeks social stimulis, as a bonus Arya is an assassin so you can reduce the confrontation between the NK and her to a few seconds of a sneak attack.

Exposing iron-will Dany to the treachery world of politics, economics and magic (aka the proper Game of Thrones) and teaching her how to play the game.

It did also cash on the need of a better fantasy show with good visuals and somewhat realistic representation of how fragile "heroes" actually are, because they are people too and they too can be offed, until the smiths invented the plot pauldrons, that is. It also had interesting actors, Bean, Headey, Addy and Dinklage were really entertaining to watch.

We've always romanticized about a fantasy swords and knights settings, which LOTR delivered earlier and there was a demand for such a show/movie, at least better than The Seeker and all those other minor ones.

No, Arya killing Night King is really fucking bad. Any one person killing the NK would have been bad. This is a threat so strong that even when the First Men and the Children cooperated to band against it, they only managed to drive it off to the north rather than defeat it. The NK should not be defeatable with dragonglass/Valyrian steel, nor should his death destroy the entire army.
