Why is she pushed by dungeons and dragons so hard as this Villain Sue? Does anyone really think her sitting on the Iron Throne makes any sense? She should've been overthrown by her own people several seasons ago. What's with this bizarre decision on the part of D&D of making her a more 'final' villain than even the Night King?
I mean shit, having Stannis return and pull a Mass Effect 3 Illusive Man where he suddenly becomes a cartoon villain would've been better than effectively half a season of those repetitive scenes of Cersei sipping on wine.

I don't think she's being pushed as a Villain Sue so much as it is just really bad writing (first and foremost) combined with a limited budget. Filming shitty, nonsensical plots of Cersei sipping wine and being smug is cheaper and easier than having to fix the mess they created with Bran, the White Walkers, prophecy, etc.

because there was literally no one else to be the final villain? Honestly, think about after season 5; tywin is dead, so Cersei and Tommen are all there really is left, and Tommen is her puppet (or was until the faith militant plot).
Honestly, name anyone else that should be the one in charge of King's Landing, there's simply no one else in the show that could be, there's no other characters that have any amount of development or screentime that Cersei has had over 8 seasons.

Cersei lives so that the final bouts between each sides champions have a lot of shit and drama going on, there is still a lot of revenge to be had and thats where the "juicy plot-twists" can still happen. For all the hype the zombie fights built up they actually went against everything that made GoT so liked among the majority of people. Normies arent here to witness an epic saga, they are here for the drama and thats the people they will pander the most as they conform most of the audience.
