Thanos' real reason for seeking to balance the universe is to prove that he was right about suggesting the half-genocide on Titan, and he was sure that someday everyone would see that. When he saw the universe would fight to undo the snap, he refused to accept that he could be wrong, that he could have been mistaken. It's everyone else, it's the whole universe that needs to change, not him. It's the logical extension of his way of thinking.

When you have a villain that people actually latch on to, you shouldn't immediately remove everything that makes them engaging and then kill the villain off in a way that ensures he'll never come back without some massive plot horseshit. Nebula should've locked him into a space prison where he still gets a small garden to look after or something, anything that actually forces him to accept his own failure instead of just wiping him from existence
