I sorta liked the first season of Castlevania, but that's more a Yea Forums thing and I'm not caught up on the second season yet. I don't think I've played more than ten minutes of any Castlevania game, either.
Love, Death and Robots was pretty solid. Especially if you dig movies like Heavy Metal or shows like Liquid Television.
THE HIGHWAYMEN is classy and well done. doesnt even look like a netflix production, it is there by mistake.
How about Dark? The story is set in Germany over three different time periods.
Try not to get spoiled, the show has a lot of suspense and build up.

Yea that Doc was pretty good. I knew about Bundy, him being a big name but I had no idea just how much shit he got away with. Its actually crazy to think that you could get away with that sort of thing so easily.
