Reminder that the reason movies look shitty at a higher framerate (like that Dark Knighr video) is because it's done through editing. It stars through at the beginning, if a movie is actually filmed for 48 fps, it would not look anything like it.

Garreth Edwards wanted the models to look and feel closer to the OT.
Why not build a shit ton of those and completely destroy all imperial ships?

Because the Empire would catch on really fast. This only works because there are two Star Destroyers in relative proximity to each other and the swarms of TIE fighters that would normally be protecting them against small craft like this were occupied elsewhere. Assuming the Empire had a way to review this battle later they would have changed the protocols on the distance between Star Destroyers during a battle and probably the protocols on leaving a Star Destroyer unprotected as well.
