when you go back and alter the past, it creates a new timeline parallel to your current one with whatever changes you made

the time-lines divert at a certain point, you go back/forwards to that point to reach your timeline/one extremely similar to it

So when Captain America went back to the past, he should have disappeared from existence all together, and instead went to a completely different version of reality. How did he then turn up as an old man in the present? Must that have been some other Captain America from yet another version of reality?

According to movie logic that CAN'T BE original timeline, but an alternative timeline. So, if they showed us another timeline (identical to the original except with 2 cap around, one laying low), fine, if that was meant to be original timeline it was a plot hole. There are a few other problems, I'll write about them later.

Time travel works however the plot needs it to work. Anyone explaining how it works is just spewing technobabble using big words that make most people's eyes roll back in their heads until the character finally says a word they understand. It doesn't really matter. They go back in time and come back out. Anything in between is just to raise stakes and add tension.

The only interesting and worth discussing thing in time travels is the coherence it holds. We're not discussing if it's doable or not but if it's logical regarding the narrative road.
They don't show regular people coming back because they just wanted to show the big hero moment with all them coming back. But since Clint's family and others come back you can assume everyone who got snapped is back.
