They hook you up to something called an E-meter which is basically a lie detector that also sends a small electric current through you. This electric current has a mild euphoric effect which is actually addictive. In other words, it's literally a polygraph that gets you slightly high. You're then asked questions which are supposed to help identify sources of personnel trauma so you can start working through them. The high associated with the machine lowers your inhibitions and makes it easier to answer personal questions.
It's something which does seem to have a very therapeutic effect for some people, which how so many people got hooked in the first place. But the CoS itself is an extremely exploitative organization which often takes information from these supposedly private sessions and uses it to essentially blackmail people into staying with the organization. For example, it used to be a pretty standard tactic for them to blackmail anybody to admitted to having experienced same-sex attraction, although that doesn't work as much anymore because attitudes towards that kind of thing have shifted.
There are people who try to take the technology and methods and apply them without involving the actual CoS organization, which is something that Miscaviage has bitterly tried to stop.

I've watched a lot of documentaries about Scientology and interviews with people who left the Church. First and foremost, the auditing sessions are simply talking therapy. You sit in a room, hold some tin cans hooked to an E-Meter and talk through your past trauma with an auditor. They make notes on everything and this is where blackmail can come in to play. You do not find out about the creation myth and Xenu until you've already given them hundreds of thousands of dollars. The reason so many people stay is simply because their entire life is based around Scientology. They work at the church, all of their friends and family are members, their children even. Imagine having to make the decision to cut ties with everyone in your life and start again, with the risk that your family may never speak to you again. This is why so many people are trapped. I honestly believe that Tom Cruise and other famous Scientologists believe in any of it, however they've supported him with his career so that's why I think he's staying. Literally, everyone he surrounds himself with will be stroking his ego 24/7, i'd stay.

I live about 5-10 min from their flag building. These fuckers are beyond creepy. There’s always about 10-15 way-too-young girls standing out front of their building in fancy dresses and stuff, with a bunch of men around. They refuse to look at anyone who isn’t a Scientologist and if you even attempt to go near the entrance to their building they’ll start threatening to call the cops. I drove a side road around their building once to shortcut somewhere and there was a guy staring at me the whole time talking into a walkie talkie.

I honestly think they paid off the FBI crew investigating her disappearance, that or they're members of the Church themselves. Either way, the FBI were negligent, had opportunities to go in and search for her but they ended up closing the case.
