Dump it into 5 gal jug

Dump into into 5 gal jug
You now have 3 gal jug with 1 gal of water inside
Empty the 5 gal jug, and put 1 gal there
Now fill 3 gal jug again and dump it into the 5 gal jug, getting 4 gal total

Set each jug on a corner (45 angle) and fill until the water reaches the halfway point (water level reaches the corners on opposite sides of the jug.
Then add the 1.5 gals of water in the 3 gal jug to the 2.5 gals of water in the 5 gal jug

Otherwise, pour from the small jug into the large jug.

With these 3 rules, you can solve pretty much any water-pouring puzzle

2 and 3 are in direct disagreement about the contents of room 2.
This means, one of them has to tell the truth, and the other has to lie.
However, "at most" one can tell the truth out of the 3 doors, which means that door one has to lie because since they disagree, the one that tells the truth has to be door 2 or door 3.
At that point, we already know that door 1 has a lady behind it, but you cant take it further by showing that since there is only one lady, door 2 lies since if it didn't both door 1 and door 2 would have a lady behind it which can't be, so door 3 is telling the truth.

You can't do step 2 without spilling even a little extra

You can spill until you see it's about to hit the nozzle and stop when the water starts coming up it.
Since the nozzle is thin, the added volume is going to be very small and the minimal difference the weighing mechanism can account for.
Of course you also can't do step 1 without getting the 5 gallons wrong just the tiniest bit.
That's not what the test is about.
