Just because the head of state dies doesn't mean the empire immediately collapses. There was like 30 years between the end of RotJ and now and anything could've happened. Maybe the new republic wasn't all it's cracked out to be. Maybe the empire found new footing under a new leader with different policies that didn't alienate half the systems with brutal oppression.
There were any number of scenarios that were possible and not dependent on writing established characters as fucking retards.
When the Empire fell, it would’ve led to a galaxy-wide power vacuum, and you could tell countless interesting stories of different conflicts, Star Wars if you will, happening in the aftermath. Instead, they went back to the well.

a corrupt, authoritarian new republic modeled after soviet russia vs a dying empire based off of nazi germany and antebellum south, with your scrappy band of heroes caught in between the two evil armies trying to find a way to defeat both and bring about a truly functional, just govt. A good narrative about how most rebellions in real life just lead to another dictatorship.
King Luke and his new band of Jedi's fighting last remnants of empire all across far flung quadrant while Queen Leia tries to reestablish republic and bring ever lasting democracy to galaxy while dealing with traitorous fractions within new senate loyal to old Crimson Guard and its rebel leader Darth Vane.
First Order are actually a ragtag Rebellion-esque bunch of terrorists using old Imperial weaponry, as well as discarded Republic fighters (imagine Star Destroyers with rusted metal patchwork, AT-ATs retrofitted as homes, with bridges between clusters of them, all standing over swampland on hellhole planets of the Outer Rim). Launching attacks on a New Republic which has authoritarian overreach over its citizens under the guise of preventing a New Empire from rising. Film revolves around establishing a middle-ground to Galactic politics, as well as introducing the concept of Grey Jedi (similar to the current sequels). Imperial Remnants fight against a Luke who influences the Senate to push further into the Outer Rim and eradicate any free systems so that Imperial insurrections can’t occur. Final film revolves around a Vader-style realisation of how his actions, despite having good intentions, have led him to become exactly what he despised. We follow a main character who defects from the Republic to the Remnants.

A threat arrives from another galaxy, with no connection to the force. Maybe terraform planets or something, and have technology that is so different from the Republic that they can't figure out how to battle them.

TFA
>There’s no resistance, only the Republic exists and the First Order is a small remnant of the Empire that still controls a peripherical region of the galaxy. They’re led by Snoke, an old Empire general with no force affinity that is kept alive by machines. The FO has been on the decline but they recently had a few new members, Kylo Ren and his knights, who came with a supercruiser with invincible shields or something, and they’re now on a grand offensive toward the Republic capital. Nobody knows how given their supposed limited ressources.
>Main plot is about defeating the doomsday ship and understanding how the First Order (and Kylo) built it.
>Han is a general but is tired of sitting behind a desk, so after discussing with Leia, the leader of the New Republic, he embarks on a secret mission to save the Republic. On his way to gather information he comes across Rey on Jakku, witnesses her using the force and hires her as a mercenary. He also takes Finn given his knowledge of the FO.
>Finn is a loyal stormtrooper but he unknowingly helped Poe escape, and he's labelled a traitor by the First Order. He's then forced to cooperate with our heroes in order to survive. His angle is trying to deceive Rey and Han in order to gain the Republic’s trust and betray them once he gathers intel to earn back his return in the First Order, but as the story progress he understands that maybe he has been lied to since he was a kid etc. In the end he grows attached to Rey, Poe and Han while the First Order only taught him about authority and hatred. He understands he's been on the wrong side all his life and this climax when he finally reveals to Han the frequency that will allow them to bypass the FO shields, which he knew all along. He’s too serious and sort of a comic relief in a fish-out-of-the-water situation.

>Rey been left alone for a long time, and she grew up selfish and distrustful, which are mandatory traits on a planet such as Jakku in order to survive. This can be established by showing her escape several looters on the opening scenes using the force, or having her bargain for BB8 when she gets offered rations. She doesn't trust Han at first but follow him to leave Jakku. She doesn't care all that much for Finn in the beginning. She appears a bit more cold, and the only time she really opens up is when leaving Finn at the Republic’s base at the end, because she understood that opening yourself and trusting others could be a strenght, and not a weakness etc.
>Kylo is a much more mysterious figure, we only know he was Luke apprentice and destroyed the temple, killed some of the other trainees and disappeared for years only to join the FO with his right hand man Hux and other former jedi apprentices. Hux is an alien that is discriminated against in the FO. Kylo is revealed to be Han’s son only when killing him, and is "defeated" while heavily injured by Finn and Rey teaming up: during the battle Rey destroys a sith holocron Kylo had on him. This result in a strange explosion, that creates some telepathic bond between them that we get a glimpse of. They then escape Kylo.
>After they destroy the ship at the last moment, it’s revealed that Kylo uncovered an ancient and forgotten sith super-weapon that can build ships & armies using the energy of a star, and controlled by old sith holocrons. They need to infiltrate the FO and find Luke if they want a chance to survive.
TLJ
>A few months after TFA, Rey has arrived in some FO administrated planet incognito in order to search for Luke, who’s been there for some times trying to reach Kylo. After some action hijinx where they meet, he decides to train her in the Force after he notices she can uses it, all the while continuing their mission of trying to find a way to Kylo and eventually his ancient base. We are introduced to the mental bond between Rey and Kylo, and see they’ve been getting more acquainted during the timeskip, interrupting each other’s daily routine. Though not friendly, the relationship is respectful and they are trying to sway each other into joining the other side. This is displayed throughout the movie with little discussions scenes, where Rey is trying to hide that she’s in fact near him working with Luke. We start to understand Kylo’s motivation a bit more clearly: opposition to the Republic inefficiency in rebuilding the Galaxy after the destruction of the Empire, end of discrimination against force users that is prevalent in the new republic…
>Meanwhile the war between Republic and FO is raging on border worlds. Poe, Finn and Chewbacca are broing it up on the frontlines of a planet they have to defend against a new FO assault, we get some moments to show how Finn is a hardass but a competent one, and we see a bit more of Poe and the history of the Republic. Some implications about how the New Republic government doesn’t trust force users given the history with the Empire. At some point the battle goes badly because Poe decided to disregard some orders as he thought he had an opportunity to win an engagement, and our group and some other soldiers are stranded in a resistance pocket in a building, fighting inevitable defeat as the Republic army retreats. Finn is injured in the engagement.
>Back to Luke and Rey, they have a plan to capture Kylo in his HQ thanks to some intel Rey had with their mental link, but it was a trap. Kylo uses this opportunity to kill Snoke blaming it on our heroes and claim the FO for himself. He then reveals his plan: to put the Force in power, restore the Jedi Order to its full glory and unify the galaxy under a new jedi knight council. He tries to convince Rey to join and we can tell he got a liking to her and is earnest in his ambitions; she accepts, but only as a way to trick Kylo. Luke escapes thanks to her help, battle ensues and they manage to escape go back to Republic space with some holocrons that were necessary to control the ancient sith factory. We still get a glimpse of the enormous force the FO has amassed during the past months and that they are about to unleash on the Republic.
>Back on the assieged Republic world, all hope seems lost for Finn, Poe and the rest. Poe has organised and led the group of Republic soldiers he was stuck with against the assaults of the FO, but they are in a precarious situation. Think Pavlov's House. Luke and Rey are shot down on the planet as they just arrive as it was the first Republic world in their path and they didn't know it was under assault. Just as the 2 groups are getting closed on, in the nick of time, Leia arrives with a fleet to relieve the assieged and saves the day. Emotional reunion between Luke and Leia to conclude the movie.
Last movie
>Opens on a giant space battle in Republic space a couple of months after TLJ. We’re quickly explained that the war hasn’t been going well. We also see that Poe and Finn have risen through the ranks. Meanwhile the knights of Ren have a commando mission on a nearby planet where they manage to retrieve the holocrons necessary to activate the ancient factory starbase, despite Luke and Rey’s intervention. We see that Kylo is much less certain of the righteousness of his mission and that some his knights, like Hux, have gotten more fanatical under the holocrons influence.
>The space battle is eventually won by the Republic but at an enormous military cost, and it’s now a battle against time to destroy the FO before they send new waves of a never-ending fleet, against which the Republic would stand no chance. Leia resigns from her position in the Republic after a political disagreement on how to proceed now. She emotionally strong-arm Luke into joining him to save her son

Having lost all their leadership and source of power, the remaining FO forces surrender or flee. Chewie was feared dead but is discovered alive. Reunion for Leia's national funeral, Kylo attends secretly

If the originals are world war 2 in space, and the prequels are world war 1 in space, then the sequels should similarly have been another conflict after WWII.
How about: cold war leading to rise of terror, like how the US-USSR cold war led to Al Qaeda irl? Not a 1:1 recreation of that of course, just as a framework like how real life conflicts were the framework for the old films.
i.e. the New Republic and Empire are locked in a stalemate cold war that threatens to broil over into a hot war due to the actions of a group of wannabe Sith cultists led by Kylo Ren? That way Kylo's edgy extremist "I do what I want" actions actually jive with his ideology, since the Sith cultists are all about that. Maybe rip off harry potter and have the cultists be force wielder supremacists who want to establish a new regime ruled by force users.
