Generally for an attack in open fields with equally skilled/equipped soldiers you want 3-1 odds in your favour to be certain of victory. Storm a strong fortification and you'd be looking at more like 10-1. Given that the army of the dead are quite literally mindless zombies, you could hold Winterfell with 10k men against 100k wights quite feasibly (assuming the dragons take each other out)
