a shame it was cut, it shows the dynamic of his relationship with Tyrion
you would never do this. in real life, you have to tie the deer up by its back legs and slit its throat so the blood drains out. it's also far easier to skin, gut, and slice out the different sections of meat while it's hanging up. no idea why they didn't do it that way. Tywin could have made far more forceful slices, had the guts pour out, etc. etc.
that deleted scene has more soul than the entirety of this show post season 4

It's pretty obvious the deer was already skinned. They rolled the fur back on and added the sound to make it look like he was doing something.
Dance has said in interviews that he spent some time with a butcher practicing on dead deer for that scene.
It should also be pretty obvious that it isn't an actual dead deer as well. The logistics would be a nightmare. Still Dance probably did study how to actually skin a deer so that when he had to, you know, act like he was skinning a deer it wouldn't look like a complete fool.
