Why do people believe that every villain needs super-tragic past and a hours-long backstory? Night King is not even a human, he is literally a living weapon created by Children. Does a nuclear bomb or a meteor approaching Earth need to be a complex character?

The night king however is the opposite of simple. He's been teased as a super mysterious force of evil with a complex backstory beginning with an even more mysterious people and the first men. He isn't just a macguffin (or at least he wasn't before). The entire Bran storyline has been him uncovering the night kings backstory.
It would've been fine if they would have just told us that there is an army of zombies that want to eat brains for zombie reasons, but they didn't. And now they are cutting out the entire storyline short just because of bad writing.
