Where are they? Varys hasn't been relevant for two-three seasons now.
The red priests are nowhere to be found even though they swore allegiance to Daenerys and the head priestess even implied she'd travel with them in season 5.

Melisandre is going to go to winterfell with fellow servents of R'hllor and fight the dead, and allow the characters to escape Winterfell. Its petty obvious
Varys is a secret Blackfyre supporter in the books and since they cut that subplot from the show they don't know what to do with him

Introducing convuluted plotlines like Aegon, Iron Islands and Dorne is the reason the books will never be finished. If I was the show runners I would have simplified Iron Islands and Dorne even further, cut Aegon like they did, but keep the Riverlands and Northern plotlines intact since they're essential to the story. I'd probably also simplify Dany's plotline, its pretty boring
