As far as I know, the world of GoT hasn't fleshed out new rules for human organs, thus they should be expected to work just like the real world. It seems out of character for a professional assassin to miss vital organs repeatedly. even still the wound looked pretty bad and wasn't looked after immediately and no standard medical procedure was followed. It's very unrealistic that Arya has survived that or was even able to elude her chaser right after. I think the whole scene was just a stupid and illogical cliffhanger for cheap shock value and in normal circumstances would require a convincing explanation from the showmakers but sadly this is the quality that we've come to expect from this show (and honestly from the network at this point)
