They killed him off for the same reason they wrote out the Jedi again and why Luke was absent for 99% of TFA: they're more interested in telling the same story over again with Rey. A more dynamic and unique story could've found room for Luke and other Jedi, but the one the sequels decided to tell didn't. Luke in the sequels is just Obi-Wan 2.0 -- all the way down to the failed apprentice.
