If you want a non-meme answer the original movie was pretty much the perfect example of the meta narrative as well as paying homage to a lot of pop culture tropes. This lead to an insane popularity that was expanded upon with the other movies that also relied on ancient thematic elements and simplistic storytelling. This makes the movies appealing to an extremely broad range of people as they’re very accessible and hold some level of interest for people from most walks of life.

As for why they’re so important to the kind of people in your picture, it has nothing to do with Star Wars itself, and everything to do with them. They base their identities and their entire existence on the pop culture they consume, so when you have a franchise as big as Star Wars, naturally they’re going to act like this.
