Thanos's powers don't even make sense. He had the power to control all of reality and was struggling to compete with 4 jobbers. If you have control over reality you shouldn't be getting beat up by Ironman, no one should even be able to touch you.

I think the point of Thanos is that he's an infinitely powerful entity without the capacity to understand the power or knowledge that comes with it.
His entire arc is one of psychological shortcomings. The answer to "Why didn't he create more resources" is because he doesn't know how, and that is a less immediate solution to the one he's kept in his mind for decades.
Even his endgame is a temporary solution. He's not a god, ironically.
