Because TLJ already ruined a shit ton of well established rules in their universe. Also we will never get good send offs for the original characters. There's also no build up to it. I don't care about any of the new characters. It's going to suck.

god I loved this scene as a kid
Except that it's not gradual. Anakin is moody in Ep II, but still clearly a believer in the light side. At worst he's rebellious, but there is no indication that he would ever try to kill his friends and mentors. In Ep III we see him kill the sand people for what they did to his mother. Now that comes out of the blue, but it's understandable. The logical leap is that we're meant to believe Anakin, a heretofore conflicted, tempermental hero, is willing to destroy the entire Jedi order just because he thinks Sheev may be able to save Padme, because he has a dream she might die. Now the kicker is, he accuses Padme of betraying him and tries to kill her too.
The problem is Lucas didn't know how to write an antihero, or at least market one to a mass audience, so he opted to cram a trilogy's worth of development into the last third of RotS. But the shift from Anakin to Vader is so sudden and so drastic that it feels like an ass-pull, like Lucas suddenly realised he had to make his hero into the eventual villain and just wrote in a bunch of unprecedented behavioral shifts.
This is the central issue with the prequels. The terrible CGI, the bad acting, the 'member these characters, all of it is better than how Anakin's character was handled.

he finally decides to go and save Palpatine in an effort to save Padme, because Padme is the only person with whom he's ever felt totally safe and is the only person who has ever understood him and loved him fully for who he his

My favorite part of the scene is when Anakin and Obi reach the edge of the Venator and dive into the combat. It’s not the spectacle of a 10,000 ship battle being thrust onto the screen in an instant, but the feeling of weightlessness I experience every time I watch it. George’s skil as director really shine in scenes like this.

I agree. The dialog was abominable, and Anakin was horribly miscast; but the story was compelling.
How tf did the Millenium Falcon make that turn? It was coming in fast and at 90 degrees.
